Combined Vegetable Stew

Serve with ¾ Basmati rice or pasta if on Skip program
Ingredients:
  • 2 tsp olive oil
  • 1 small onion, thinly sliced
  • ¼ cup tomato paste
  • ¼ tsp chilli powder
  • 1 tsp cumin seeds
  • ½ cup tomato juice
  • 1 cup vegetable/ chicken stock
  • 440g tin crushed tomatoes
  • 2 small carrots, sliced
  • 2 medium zucchini, halved and cut into chunks
  • 20 green beans, top and tailed
  • 300g cauliflower, cut into small florets

Method:

  1. Heat oil in a large pan. Add the onions, tomato paste, chilli, cumin seeds and tomato juice. Stir until well combined.
  2. Add the stock and crushed tomatoes. Bring to the boil. Reduce the heat. Add the remaining vegetables. Simmer, uncovered, until soft.
  3. Serve with 120g grilled red meat or chicken.
