Combined Vegetable Stew
Serve with ¾ Basmati rice or pasta if on Skip program

Ingredients:
- 2 tsp olive oil
- 1 small onion, thinly sliced
- ¼ cup tomato paste
- ¼ tsp chilli powder
- 1 tsp cumin seeds
- ½ cup tomato juice
- 1 cup vegetable/ chicken stock
- 440g tin crushed tomatoes
- 2 small carrots, sliced
- 2 medium zucchini, halved and cut into chunks
- 20 green beans, top and tailed
- 300g cauliflower, cut into small florets
Method:
- Heat oil in a large pan. Add the onions, tomato paste, chilli, cumin seeds and tomato juice. Stir until well combined.
- Add the stock and crushed tomatoes. Bring to the boil. Reduce the heat. Add the remaining vegetables. Simmer, uncovered, until soft.
- Serve with 120g grilled red meat or chicken.
