Lime Chilli Chicken Burgers

Serves 2 (6 Burgers)

Ingredients:
  • 240g chicken mince
  • 1/2 small onion finely chopped
  • 1/2 med carrot grated
  • 1 tbsp finely chopped parsley
  • 30g wholegrain bread crumbs
  • 1 egg
  • 1 1/2 tsp lime & chillie seasoning
  • pinch cracked pepper

Method:

Mix all ingredients together in a bowl until combined and using your hands form mixture into 6 patties.

In a medium non stick frypan add 1 tsp of olive oil or spray lightly with oil. Place burgers and cook for 2-3 minutes on either side or until brown and cooked through.

Plate up, and serve with 1 tbsp of spicy tomato or sweet chilli sauce.

Serve with a salad. We used mixed lettuce leaves, baby spinach, rocket, tomato, cucumber, shallots and bamboo shoots with a squeeze of lemon.

Burgers can be eaton hot or cold and taste great reheated the next day.
