2 Avocados
The juice of 2 limes
Salt and pepper to taste
3 chives finely chopped
100g baby spinach or cos lettuce leaves
24 cooked king prawns, peeled and deveined
1 tablespoon extra virgin olive oil


Halve, peel and deseed avocados.
Thickly slice avocado flesh lengthways and place in a large bowl.
Drizzle with lime juice.
Season with salt and pepper, add chives and toss.
On a serving plate, arrange lettuce or spinach leaves, prawns and avocados.

Drizzle with oil and sprinkle over remaining chives.
