Thai Coconut Fish

  • NO DAIRY
  • GOOD SOUCE OMEGA 3

Serves 4.

Ingredients:
  • 4 x 120g white fish fillets
  • 1/4 lite coconut milk 
  • 1 small red chilli chopped
  • 1 stalk lemon grass finely chopped
  • 1/2 cup mint leaves
  • 1/2 cup coriander
  • 1 small red onion

Method:

Put onion, mint, lemongrass, chilli & coconut milk into a food processor and process until smooth. 

Coat the fish and allow to marinade for 10 minutes. Fry fish in a non stick pan for 3-5 minutes until cooked. 

Serve with Asian steamed veges.
