Method:
Put onion, mint, lemongrass, chilli & coconut milk into a food processor and process until smooth.
Coat the fish and allow to marinade for 10 minutes. Fry fish in a non stick pan for 3-5 minutes until cooked.
Serve with Asian steamed veges.
