Ingredients

2 thin slices veal
1 small clove garlic finely chopped
1 teaspoon mustard
1 tablespoon chopped parsley
1 onion finely chopped
1/2 cup tomato juice
1 stick celery finely sliced
1/2 teaspoon paprika
1 teaspoon soy sauce

Method

Brown veal in non-stick frypan (NO oil or fat). Remove from pan and spread mustard on veal, sprinkle garlic on top. Place parsley and onion in centre and roll meat up. Secure with toothpicks. Add soy sauce to pan and warm. Add veal, paprika, tomato juice and celery. Cover and simmer for 15 minutes or till veal is cooked through.
